My Secret Pal From Quilting Haven....whoever you may be.
I signed up to do a secret pal exchange at www.quiltinghaven.com It is a site that I enjoy going to and reading and chatting with other quilters. I wanted to share my packages from my dear swap partner. She has been so nice to me, and our little girl. ;) Please excuse my pictures, they are taken from my cell phone.
This is my August package from my special friend. She surprised my dear Mary-Grace with her very own scarf and she LOVES IT!! :) She sent two great magazine. I love house blocks so I was very excited to see this one. The other magazine is a huge one! The fabrics are great and I will definitely be using them. The pins are the ones I use that I never have enough of. ;) I loved the little compartments will come in handy with everything in my sewing room....if I ever get in there to mess with it.
This my package from July. It has the scarf that Mary-Grace is modeling in the picture below that my secret pal sent for me. :) There's a recipe here for Eight Layer Casserole (this sounds good-I'm going to have to try it out. It serves 8 so that will be great for our big family, a pair of scissors, a glue stick-I use these all the time, a note pad, a dishcloth-I can't wait to use. I clean for a lady that uses these. They still look great time after time. The fabric is great. I love the colors. Can't wait for the weather to turn cool so Mary-Grace and I can wear our scarves. :)

Dinner Monday Night...... Taco Salad!
Dinner last night was Taco Salad. We used chips, lettuce, taco meat, cheddar & mozzarella cheese, chili beans, and sour cream. :) I also added salsa on top after I took my photo. We used our fine china as you can see. ;)
It has been well over a year since I've posted anything. Lots have changed, but I'll catch you up later. ;) Dinner tonight is chicken casserole, beans & cornbread. Here's the recipe for the cornbread that I love to make.
Corn Bread
Stir together:
1-1/2 cups corn meal
2 cups flour
2/3 cup sugar (or Splenda)
2 tablespoons baking powder
1 teaspoon salt
Mix in:
2 cups milk
2 eggs
1/4 cup canola oil
Spoon into two 8x8" baking pans. (I put mine in an iron skillet.) Bake about 20 minutes at 350°. Or bake in a 9x13" pan for 25-30 minutes or until bread tests done. (I bake mine longer because it's just not done in 30 minutes.)

Meatball Sandwich Casserole
I got this recipe from Moms Crazy Cooking. It was very good. I used french bread to make ours. My husband said it was good but next time wants me to add pepperonni and some parmesan cheese to it. =)

Meatball Sandwich Casserole

1 Baguette French Bread (cut into 18-24 slices)
Olive Oil
1 pkg Homemade Comfort Meatballs (or frozen), bite sized
1-1/2 cups spaghetti sauce
1 cup mozzarella cheese, shredded
Preheat oven to 350. Meanwhile, slice your bread. Brush each slice with olive oil on one side, just coat with pastry brush. Line the bottom and the side with the bread slices...oil side up...slightly overlapping the slices on the side. You won't need to grease your dish for this recipe. Use a deep casserole dish, I made the recipe in a smaller 8x8 pan - but depending how much you want to make you can use a 9x13 pan too.
Bake bread for about 10 minutes or until the edges are golden brown. In a separate bowl, mix meatballs & spaghetti sauce to coat (this is a perfect recipe for left over spaghetti and meatballs too). Remove the bread from the oven and spoon the meatball mixture into the dish on top of the bread. Return to oven and bake for 25-30 minutes or until thoroughly heated through in the center. Pull out at about 25 minutes and cover with the mozzarella cheese and baked it for another 5 minutes.

I love making things that you normally buy in a box, at home. Especially when it’s as easy to make as this Homemade Baking Mix. I don’t make fresh biscuits nearly as often as I crave them, for one reason only. I’m lazy.
Bread isn’t a nutritional requirement when planning my evening meals so it’s often left out of the equation. Not, that I don’t love it. It’s just that when the clock strikes five I want to be done with my day and only do the work that is required of me.
That ‘s the great thing about this mix. You whip it up one day, keep it in the fridge and any time you want fresh biscuits you take a couple cups out, add some milk and bake it up. You can also use this mix for any recipe that calls for a bisquick/baking mix. No need to go to the store when you have this stashed away in your freezer.
Since we are a small family this recipe is enough to last us a while. But, it can be easily doubled or tripled depending on the amount your family will go through.

Homemade Baking Mix
adapted from allrecipes- 5 cups flour
- 1/4 cup baking powder
- 2 Tbsp. sugar
- 1 tsp. salt
- 1 cup butter or margarine
- Mix together flour, baking powder, sugar and salt. Cut in butter until mixture is crumbly.
- Store in an airtight container for up to 6 weeks or in the freezer for longer storage.
Makes approx: 6 cups
To make Biscuits
Mix together 1/3 cup of milk for every 1 cup of mix. Drop onto un-greased cookie sheets and bake @ 450ºF for 10-12 min.*Add any additional ingredients you wish such as cheese or herbs before adding the milk.
* 1 cup of mix will yield about 6 biscuits.
To make Pancakes:
Mix 2 cups of mix with 1 cup milk and 2 eggs. Cook on hot griddle.*I have not made the pancakes myself but have heard rave reviews about using this mix for them.
*As with the biscuits you can add any flavouring or other ingredient you would like, such as chocolate chips or blueberries.
Update: I whipped up these pancakes over the weekend and they truly are delicious. My husband usually does not get overly excited about pancakes and he flipped (ha) over these. The taste and consistency is a cross between pancakes and french toast. Eggy, buttery and delicious! He has now requested that this be my pancake recipe from now on. I won’t complain about that. :)

I have taken it to church and the skillet came back empty! :) I use 5 eggs when I double it (doubling everything else and cook for around an hour-I just test to see when it's done). Super yummy with chili or beans or just by itself with butter. YUMMY!
